- 12–14 oz zucchini (about 1 1/2 cups grated)
- 1 cup white granulated sugar
- 2 eggs
- 1/2 cup vegetable or canola oil
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. Wash zucchini, wipe it off, and cut off the very tip. Grate the zucchini and pat dry.
- 3. In a large bowl, whisk together zucchini, eggs, oil, vanilla extract, and sugar until combined.
- 4. Add flour, cinnamon, nutmeg, salt, baking soda, and baking powder. Gently whisk until smooth.
- 5. Grease a baking dish and pour in the batter.
- 6. In a medium bowl, combine brown sugar, white sugar, cinnamon, and flour. Mix well.
- 7. Pour in melted butter and fold until crumbly. Spread over the batter.
- 8. Bake for 55-60 minutes until a toothpick comes out clean.
- 9. Whisk powdered sugar and heavy cream for icing and drizzle over the bread once cooled.
