Description

Enjoy this moist and flavorful zucchini bread, made with fresh grated zucchini, warm spices, and a delicious streusel topping.


Ingredients

  • 1214 oz zucchini (about 1 1/2 cups grated)
  • 1 cup white granulated sugar
  • 2 eggs
  • 1/2 cup vegetable or canola oil
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  • 1. Preheat the oven to 350°F (175°C).
  • 2. Wash zucchini, wipe it off, and cut off the very tip. Grate the zucchini and pat dry.
  • 3. In a large bowl, whisk together zucchini, eggs, oil, vanilla extract, and sugar until combined.
  • 4. Add flour, cinnamon, nutmeg, salt, baking soda, and baking powder. Gently whisk until smooth.
  • 5. Grease a baking dish and pour in the batter.
  • 6. In a medium bowl, combine brown sugar, white sugar, cinnamon, and flour. Mix well.
  • 7. Pour in melted butter and fold until crumbly. Spread over the batter.
  • 8. Bake for 55-60 minutes until a toothpick comes out clean.
  • 9. Whisk powdered sugar and heavy cream for icing and drizzle over the bread once cooled.
