Description
This viral sweet potato beef bowl combines sweet potatoes, ground beef, and cottage cheese for a nutritious and delicious meal. Perfect for meal prep or a quick weeknight dinner, this dish is packed with flavor and comfort.
Ingredients
Scale
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp neutral oil
- 1/2 tsp cinnamon (optional)
- 1 lb ground beef (lean preferred)
- 2 tbsp taco seasoning
- 1 tbsp tomato paste
- 2 cups cottage cheese
- 2 avocados, cubed or sliced
- 4 tbsp hot honey (or to taste)
Instructions
- Toss the sweet potato cubes in oil and season generously with salt and pepper. If desired, sprinkle with cinnamon for added flavor.
- Air fry the sweet potatoes at 400°F for 10-15 minutes until golden and cooked through, shaking halfway for even cooking. Alternatively, roast them in the oven on a baking sheet lined with parchment paper.
- While the sweet potatoes are cooking, heat a large skillet over medium-high heat. Cook the ground beef, breaking it up as it cooks. Stir in the tomato paste and taco seasoning, cooking until browned.
- Once the sweet potatoes are ready, assemble your bowls. Divide the sweet potatoes and ground beef evenly, topping each bowl with cottage cheese and avocado. Drizzle with hot honey for a sweet kick.
Notes
- For added protein, consider including black beans or corn.
- You can substitute ground beef with shredded chicken or turkey for a lighter option.
- This dish is great for meal prep; store components separately in the fridge for easy assembly throughout the week.
