Description

This viral sweet potato beef bowl combines sweet potatoes, ground beef, and cottage cheese for a nutritious and delicious meal. Perfect for meal prep or a quick weeknight dinner, this dish is packed with flavor and comfort.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tbsp neutral oil
  • 1/2 tsp cinnamon (optional)
  • 1 lb ground beef (lean preferred)
  • 2 tbsp taco seasoning
  • 1 tbsp tomato paste
  • 2 cups cottage cheese
  • 2 avocados, cubed or sliced
  • 4 tbsp hot honey (or to taste)

Instructions

  1. Toss the sweet potato cubes in oil and season generously with salt and pepper. If desired, sprinkle with cinnamon for added flavor.
  2. Air fry the sweet potatoes at 400°F for 10-15 minutes until golden and cooked through, shaking halfway for even cooking. Alternatively, roast them in the oven on a baking sheet lined with parchment paper.
  3. While the sweet potatoes are cooking, heat a large skillet over medium-high heat. Cook the ground beef, breaking it up as it cooks. Stir in the tomato paste and taco seasoning, cooking until browned.
  4. Once the sweet potatoes are ready, assemble your bowls. Divide the sweet potatoes and ground beef evenly, topping each bowl with cottage cheese and avocado. Drizzle with hot honey for a sweet kick.

Notes

  • For added protein, consider including black beans or corn.
  • You can substitute ground beef with shredded chicken or turkey for a lighter option.
  • This dish is great for meal prep; store components separately in the fridge for easy assembly throughout the week.
