A delicious and easy-to-make bowl packed with roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and fresh avocado, all drizzled with a hypnotic hot honey sauce. Perfect for a quick, protein-packed meal that’s both satisfying and nutritious.

- 2 medium/large sweet potatoes, cubed
- 2 tsp olive or avocado oil
- 1/2 tsp sea salt
- 1/2 tsp garlic powder
- 1/8 tsp black pepper
- 1 lb lean ground beef (90/10)
- 2–3 tbsp taco seasoning
- 2 tbsp water (if needed)
- 1 cup cottage cheese
- 1 avocado, chopped
- 4 tsp hot honey
- Hot sauce (to taste)
- Pickled onions and/or hot and sweet jalapeños (optional)
Instructions
- Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, sea salt, garlic powder, and black pepper. Spread them on a baking sheet and roast for 20 minutes, flipping halfway through.
- While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 6-7 minutes. If needed, add taco seasoning and a couple of tablespoons of water to keep it moist.
- Once the sweet potatoes are done, divide them between four bowls. Top each bowl with the cooked ground beef, then spoon cottage cheese over each serving. Add chopped avocado, drizzle with hot honey, and finish with hot sauce and pickled onions or jalapeños if desired.
