Ingredients

  • 1 cup cottage cheese
  • 1 egg
  • 1/8 tsp salt (omit if cottage cheese is salted)
  • 1/4 tsp Italian seasoning (or your favorite seasoning)
  • Fresh mozzarella
  • Arugula
  • Jarred roasted red peppers
  • Cucumbers Avocado
  • Salt & pepper
  • Balsamic glaze
  • Chopped basil

Instructions

  • 1. Preheat oven to 350°F. Line a 13″x9″ baking sheet with parchment and spray lightly.
  • 2. Blend cottage cheese, egg, salt, and seasoning in a food processor until smooth.
  • 3. Pour batter onto prepared pan and spread into a thin, even layer.
  • 4. Bake for 25–35 minutes, until golden and set. Let cool 5 minutes.
  • 5. Fill with mozzarella, arugula, roasted red peppers, cucumbers, avocado, salt, pepper, balsamic glaze, and basil.
  • 6. Roll up and enjoy!

Notes

Swap in your favorite fillings—try grilled chicken, sautéed mushrooms, or scrambled eggs.

Store unfilled wraps in the fridge for up to 2 days.

For a dairy-free version, use plant-based cottage cheese.
