Description

Ultimate Gooey Brownies with a fudgy center, shiny crackly top, and endless add-in options. The best homemade brownies for any occasion!


Ingredients

  • 3/4 cup unsalted butter (12 tablespoons)
  • 2 tablespoons vegetable oil
  • 1/2 cup unsweetened Dutch-processed cocoa powder
  • 1 1/2 cups granulated sugar, divided (1/2 cup, 1 cup)
  • 2 large eggs, plus 1 egg yolk
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips
  • Add-ins: 1/2 cup to 1 cup of M&M’s, nuts, or roughly chopped cookies

Instructions

  • 1. Preheat oven to 350°F. Line an 8×8 or 9×9-inch baking pan with parchment paper and spray lightly with non-stick baking spray.
  • 2. Sift together flour, salt, and cocoa powder in a large bowl. Set aside.
  • 3. In a medium saucepan, combine butter, oil, and 1/2 cup sugar. Heat over medium, stirring frequently, until butter is melted. Remove from heat.
  • 4. In a large mixing bowl, whisk eggs, egg yolk, and remaining 1 cup sugar until well combined. Stir in vanilla.
  • 5. Slowly pour warm butter mixture into egg mixture, whisking constantly until combined.
  • 6. Add dry ingredients and stir with spatula until just combined.
  • 7. Fold in chocolate chips and any add-ins with a few folds, without overmixing.
  • 8. Scrape batter into prepared pan and smooth the top.
  • 9. Bake for 30 minutes (9″ pan) or 40 minutes (8″ pan), or until edges are firm and top is shiny and crackly.
  • 10. Cool completely in pan on a rack, about 2 hours, before slicing.

Notes

  • For candies on top, add after 20 minutes (9″ pan) or 30 minutes (8″ pan) of baking, then return to oven.
  • Store brownies in an airtight container at room temperature for up to 4 days, or freeze for up to 3 months.
