  • 4 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ½ teaspoon salt
  • 1 lb ground beef
  • 1 packet taco seasoning (I like Siete)
  • 14-ounce can black beans, drained and rinsed
  • 2 avocados, sliced
  • 2 cups cottage cheese
  • Pickled onions for topping
  • Pickled jalapeños for topping
  • Chopped cilantro for topping
  • Salsa (optional, for topping)

Instructions

  1. Preheat the oven to 425 degrees F.
  2. In a large bowl, combine the diced sweet potatoes, olive oil, cumin, chili powder, garlic powder, smoked paprika, and salt. Toss well to coat.
  3. Spread the sweet potatoes on a greased baking sheet and bake for 25-30 minutes, stirring halfway through.
  4. In a medium skillet over medium-high heat, brown the ground beef, breaking it into small pieces as it cooks.
  5. Once browned, add the taco seasoning and follow the packet instructions, or add about 2 tablespoons of water if using homemade seasoning. Cook until combined.
  6. Assemble the bowls by adding roasted sweet potatoes, ground beef, black beans, avocado slices, and cottage cheese to each bowl.
  7. Top with pickled onions, pickled jalapeños, salsa (if desired), and chopped cilantro. Serve and enjoy!

Notes

For quick pickled onions, bring ½ cup apple cider vinegar, ½ cup water, and 2 tablespoons of sugar to a boil. Thinly slice one red onion and place it in a mason jar. Pour the hot vinegar mixture over the onions and refrigerate for at least 30 minutes.
