Description

A festive, creamy, and fruity layered dessert featuring graham cracker crust, whipped cream cheese, and vibrant strawberry and blueberry pie fillings. Perfect for 4th of July or any summer celebration!

Crust:

  • 2 1/2 cups graham cracker crumbs
  • 12 tablespoons unsalted butter, melted

 

Cream Cheese Mixture:

  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup confectioners’ sugar
  • 4 cups whipping cream
  • 2 teaspoons vanilla extract, divided
  • 6 tablespoons granulated sugar

 

Mixed Fruit Filling:

  • 1 (21 oz.) can strawberry pie filling
  • 1 (21 oz.) can blueberry pie filling

Instructions

  1. 1. In a bowl, combine graham cracker crumbs and melted butter. Blend with a fork until crumbs are moistened. Set aside 3 tablespoons of crumbs to sprinkle on the top.
  2. 2. Press crumb mixture into the bottom of a 9×13-inch pan that’s been sprayed with non-stick cooking spray.
  3. 3. With an electric mixer, cream together softened cream cheese, confectioners’ sugar, and 1 teaspoon vanilla extract until smooth.
  4. 4. In a separate bowl, whip the whipping cream, granulated sugar, and remaining 1 teaspoon vanilla extract until stiff peaks form.
  5. 5. By hand, mix together whipped cream and cream cheese mixture until well combined.
  6. 6. Spread 1/3 of the cream cheese/whipped cream mixture (about 3 cups) evenly over the crust.
  7. 7. Drop strawberry pie filling by large spoonful dollops on top of the cream cheese layer. Gently spread strawberry pie filling evenly over the cream cheese layer, connecting the dollops.
  8. 8. Top strawberry layer with another 1/3 cream cheese/whipped cream mixture. Gently spread it evenly over the strawberry layer, covering it completely.
  9. 9. Drop blueberry pie filling by large spoonful dollops on top of the second cream cheese layer. Gently spread blueberry pie filling evenly over the cream cheese layer, connecting the dollops.
  10. 10. Top blueberry layer with remaining 1/3 cream cheese/whipped cream mixture. Gently spread it evenly over the blueberry layer, covering it completely.
  11. 11. Sprinkle the top with the 3 tablespoons reserved graham cracker crumbs.
  12. 12. Cover and refrigerate overnight before serving.

Notes

  • For best results, use premium pie fillings with more berries.
  • You can substitute 2 (8 oz.) containers of Cool Whip for the homemade whipped cream, but homemade is preferred.
  • Overnight chilling is essential for the layers to set and meld together.
  • Garnish with fresh berries or extra whipped cream for a festive touch.
