Description

Mini Fruit Pizzas with soft sugar cookie crust, creamy whipped topping, and fresh fruit. Perfect for parties and summer gatherings!


Ingredients

Scale
  • 1/4 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1/8 tsp. salt
  • 1 tsp. cream of tartar
  • 1/2 tsp. baking soda
  • 1 1/3 cup flour
  • 1 cup heavy whipping cream
  • 8 oz. cream cheese, softened to room temperature
  • 3/4 cup powdered sugar
  • Various fruits
  • Melted white chocolate (for drizzling)

Instructions

  • 1. Preheat oven to 350°F. Cream butter and sugar together until light and fluffy.
  • 2. Add egg, salt, cream of tartar, baking soda, and flour. Mix until combined.
  • 3. Press dough together, roll out, and cut circles. Place on greased pan and bake 15-18 minutes, until golden brown.
  • 4. Remove from pan and chill in refrigerator for 30-40 minutes.
  • 5. Whip heavy cream until fluffy. Chill for 10-15 minutes.
  • 6. Beat cream cheese until smooth. Add powdered sugar and mix until combined. Fold in whipped cream.
  • 7. Spread topping onto cooled crusts. Chill for 1 hour.
  • 8. Arrange fruits in desired pattern. Drizzle with melted white chocolate.
  • 9. Chill for 1-2 hours before serving.
