Description
Mini Fruit Pizzas with soft sugar cookie crust, creamy whipped topping, and fresh fruit. Perfect for parties and summer gatherings!
Ingredients

- 1/4 cup butter
- 3/4 cup sugar
- 1 egg
- 1/8 tsp. salt
- 1 tsp. cream of tartar
- 1/2 tsp. baking soda
- 1 1/3 cup flour
- 1 cup heavy whipping cream
- 8 oz. cream cheese, softened to room temperature
- 3/4 cup powdered sugar
- Various fruits
- Melted white chocolate (for drizzling)
Instructions
- 1. Preheat oven to 350°F. Cream butter and sugar together until light and fluffy.
- 2. Add egg, salt, cream of tartar, baking soda, and flour. Mix until combined.
- 3. Press dough together, roll out, and cut circles. Place on greased pan and bake 15-18 minutes, until golden brown.
- 4. Remove from pan and chill in refrigerator for 30-40 minutes.
- 5. Whip heavy cream until fluffy. Chill for 10-15 minutes.
- 6. Beat cream cheese until smooth. Add powdered sugar and mix until combined. Fold in whipped cream.
- 7. Spread topping onto cooled crusts. Chill for 1 hour.
- 8. Arrange fruits in desired pattern. Drizzle with melted white chocolate.
- 9. Chill for 1-2 hours before serving.
Notes
- Use any combination of fruits you like.
- Store leftovers in fridge up to 2 days.
- Try dark chocolate or caramel drizzle for a twist.
