Description
Dubai chocolate ice cream bars blend creamy pistachio ice cream, crispy kataifi, and a rich chocolate shell for a luxurious, homemade treat inspired by Middle Eastern flavors.

- 13.5 oz can coconut cream (solid parts only)
- 1/2 cup coconut milk
- 1/2 cup pistachio cream
- 1 tsp vanilla extract
- 1/4 cup coconut sugar
- 1 cup kataifi
- 2 tsp oil
- 1/4 cup pistachio cream (for kataifi)
- 1 cup chocolate (melted)
- 3 tsp coconut oil chopped pistachios (for garnish)
Instructions
- 1. Blend the coconut cream, coconut milk, pistachio cream, vanilla, and coconut sugar until smooth. Pour the mixture into ice cream bar molds and freeze for about 2 hours, or until mostly set.
- 2. While the bars freeze, toast the kataifi in a skillet with a little oil over medium heat, stirring until golden and crispy. Remove from heat and mix in the pistachio cream.
- 3. Remove the semi-frozen bars from the molds, spoon some of the pistachio kataifi mixture into the center of each, and smooth it out. Return the bars to the freezer for another 20 minutes to firm up.
- 4. Melt the chocolate and coconut oil together in the microwave in 30-second increments, stirring between each, until smooth. Dip each frozen bar into the melted chocolate and place on a piece of parchment paper.
- 5. Drizzle with extra chocolate, sprinkle with crushed pistachios, and return the bars to the freezer one more time to fully set. Enjoy immediately or store in the freezer for later!
Notes
- Use just the solid coconut cream: Make sure to scoop out only the thick, solid part from the can of coconut cream — that’s what gives the bars their rich and creamy texture.
- Toast the kataifi carefully: Kataifi crisps up fast! Keep an eye on it and stir constantly so it doesn’t burn — golden brown is what you’re aiming for.
- Work quickly when dipping: Have everything ready before you start dipping the bars in chocolate. The chocolate can thicken as it cools, and you want smooth, even coats for that perfect snap!
