Description

A delicious and nutritious cottage cheese beef sweet potato bowl that combines hearty ground beef, sweet roasted potatoes, and creamy cottage cheese.


Ingredients

  • 2 medium/large sweet potatoes, cubed
  • 2 teaspoons olive or avocado oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ⅛ teaspoon black pepper
  • 1 pound lean ground beef (90/10)
  • 23 tablespoons taco seasoning (adjust to taste)
  • 2 tablespoons water (if needed)
  • 1 cup cottage cheese (preferably Good Culture)
  • 1 avocado, chopped
  • 4 teaspoons hot honey
  • Hot sauce (to taste)
  • Pickled onions and/or hot and sweet jalapeños (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, sea salt, garlic powder, and black pepper.
  3. Spread the sweet potatoes evenly on a baking sheet and roast for 20 minutes, flipping halfway through. You can also cook these in your air fryer.
  4. While the sweet potatoes cook, heat a skillet over medium-high heat.
  5. Add ground beef, breaking it apart with a spatula. Cook until browned and fully cooked, about 6-7 minutes.
  6. Add taco seasoning and, if needed, a little water for extra moisture.
  7. Divide roasted sweet potatoes between four bowls.
  8. Top each bowl with cooked ground beef, then spoon cottage cheese over each bowl.
  9. Add chopped avocado, drizzle with hot honey, and finish with hot sauce and pickled onions or jalapeños if desired.

Notes

Keep the beef, sweet potatoes, and toppings like cottage cheese and avocado in separate containers in the fridge for 3–4 days. Reheat the beef and sweet potatoes, then assemble with fresh toppings before serving.
